Kids baking day

My kiddies had a baking day today with me and we had flour and chocolate everywhere, we made

Thank you It was loads of fun, we spent hours together

The top one is a simple butterfly bun
Basic Victoria sandwich recipe

100g/4oz margarine
100g/4oz caster sugar
2 size 3 egg
100g/4oz self raising flour

Cream margarine an sugar together,
beat eggs in one at a tim adding a little flour a time
gently fold in remainder of flour
line bun tin with bun cases and half fill each with mixture
cook on gas 5/ 190C or 375 F for 10-15mins

For the filling
6oz icing sugar
3oz margarine

mix them both together
cut a hole in the top of the bun, fill the hole with some buttercream, cut the bun top in half and stick to the buttercream like wings


The second is the same as the bottom (oat cookie) but the kiddies decorated the tops of some of them with icing sugar and colouring

100g/4oz margarine
75g/3oz soft light brown sugar
2 tbsp syrup
175g/6oz self raising flour
100g/4oz oats (choc chips/cherries/coconut/etc whatever you enjoy) or you can add an oz of cocoa, ginger etc
2 tbsp milk (i never put this in)

beat margarine and sugar together
stir in syrup, flour and oats (or whatever you choose)
Place spoonfuls on a greased baking tray
heat gas 4 180C 350F for 8-10 mins



Scones/Rock buns

225g/8oz self raising flour
pinch salt (i never use this)
50g/2oz margarine
25g/1oz caster sugar
50g/2oz currents or sultanas
1 size 3 egg beaten with sufficient milk to make 150ml/1/4 pt liquid

Mix flour, salt and rub in margarine
stir in sugar and fruit
Add egg and milk liquid reserving a little for the tops
knead lightly on floured top
roll out into circles about 1cm thickness - 6.5cm rounds
re-roll trimmings and cut out
grease baking tray and place spaced out a little, brush the tops with the remainder of the egg liquid.

bake for 10 mins in gas 7 220C 425F
