Post diabetic zucchini bread


I am looking for a recipe that turns zucchini bread into something a diabetic can eat. Is there a recipe for that?

You might find some tips on changing a recipe to suit diabetics in our Diabetic Recipe section.

One of our members has posted some hints to baking with Splenda here. The tips she mentions might come in handy.

This is one I got off the internet somewhere, but I have made it and by using splenda or a store brand of the same thing it tastes just like my old recipe using sugar

Zucchini Bread using Spelnda


1 1/2 cups all purpose flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 tsp ground cinnamon
2 large eggs
1 1/4cups granulated splenda
1/3 cup canola oil
1/2 cup unsweetened applesauce
1 tsp vanilla extract
1 cup shredded zucchini
1/2 cup chopped walnuts


Preheat oven to 350 degrees. Spray a 8 x 4" loaf pan with nonstick spray.Combine flour, baking powder, soda, salt and cinnamon and set aside. Beat eggs and splenda on medium speed with an electric mixer for 5 minutes. Add oil, applesauce and vanilla and beat at medium speed 1 minute or till blended. Add flour mixture and beat at low speed just till blended. Stir in zucchini and walnuts. Spoon batter into prepared pan. Bake 40 minutes a toothpick inserted in center comes out clean. Cool in pan on a wire rack 10 minutes; remove from pan and cool on a wire rack. Makes 12 servings

Fiber 1g
Sugars 2g
Protein 4g

Anyone else have some good zucchini bread recipes that a diabetic can use?

I've made this pumpkin bread using Splenda. I'm sure that you could leave out some of the spices (providing that you like the pumpkin) and add some shredded zucchini to it. Bet that would be good!
