Pinkie Winky Need a Butter Cookie Recipe

I'm looking for a recipe for butter cookies that they sell in bakeries - they're usually pretty small, round and have different colored sprinkles on top. The bakeries I've been to sell them for about $6.99 a pound! That's a little pricey for cookies if you ask me. Does anyone know what I'm talking about and if so, do you have a recipe for them?? Thanks in advance!

Butter Cookies

Hi:

I just joined this club today and it seems to be just what I was looking for in a recipe club. I hope this recipe is close to what you want as far as the cookie is concerned. It doesn't have the sprinkles but the cookie is good.

Amount Measure Ingredient -- Preparation Method

250 g butter
½ cup icing sugar mixture
1 teaspoon vanilla extract
1 ½ cups plain flour
½ cup cornflour
BUTTERCREAM
80 g butter
2/3 cup icing sugar mixture
1 teaspoon finely grated lemon rind
1 teaspoon lemon juice.

Preheat oven to moderately slow 160C. Line three baking trays with baking paper. Beat the butter, sifting icing sugar mixture and vanilla with an electric mixer until pale. Stir in the combined sifted flours in two batches. With lightly floured hands, roll two level teaspoons of mixture into balls and place on oven tray about 3cm apart. Dip fork into a little extra flour and press down lightly onto each biscuit to flatten slightly. Bake in moderately slow oven for about 15 minutes or until biscuits are a pale straw colour. Stand the biscuits on the trays for 5 minutes, then transfer to wire racks to cool.

BUTTER CREAM: Beat the butter, sifted icing sugar mixture and rind in a small bowl with an electric mixer until pale and fluffy. Beat in the juice.

To serve, sandwich two biscuits with a teaspoon of the butter cream. Dust with a little extra sifted icing sugar if desired.

I have a recipe book for 1001 cookie recipes by Gregg R. Gillespie and it has 10 - 12 Butter Cookie Recipes in it. Would you like me to post them here? or pm me and I will see if I can get you copies. If you want fancy shaped cookies you will need a cookie press.

Butter Cookies III

2 Cups Butter, at room temperature
1 Cup Powdered Sugar
2 large Eggs
4 Cups all purpose Flour

Preheat the oven to 350 degrees.

In a large bowl, cream the butter and powdered sugar. Beat in the eggs one at a time. Gradually blend in the flour.

On a floured surface, roll out the dough to a thickness of 1/4 inch. With a 1 1/2 inch round cookie cutter, cut out circles and place them 1 inch apart on ungreased baking sheets.

Bake for 12 to 15 minutes, until lightly colored. Tranfer to wire racks to cool.
