ISO simple tofu recipes

Our very own Pag36 is searching for some simple recipes ideas using tofu. She doesn't want anything that is too complicated and it cannot contain fish.

Hopefully some of our wonderful members will be able to help her out with some recipes.

I would love some new tofu recipes too, especially since my ds1 has become a vegetarian. I have cooked tofu a few times and learned that if you marinate and cook it slowly, it will absorbe the flavor of the sauce and taste better. I have used it in a stir fry and marinated it in sesame terriyaki sauce and then cooked it slowly with the veggies and it came out great.

Glad to know I am not the only one that would like some simple tofu recipes.
Sammi what veggies did you cook it with after marinating with the terriyaki sauce?

Spicy Tofu and Vegetable Stir Fry

8 oz extra firm reduced fat tofu, cut into 1/2" cubes
6 scallions, minced
1/4 cup "lite" soy sauce
1/4 cup apple juice
5 cloves garlic, minced
1 tsp fresh ginger, grated
1/2 tsp red pepper, ground
1/3 cup fat free chicken stock
1/2 medium onion, sliced thin
1 large carrot, julienned
1 cup broccoli florets
1/2 tsp olive oil

In a nonmetal shallow dish combine tofu, scallions, soy sauce, apple juice, garlic, ginger, and red pepper. Cover and refrigerate 1 hour, stirring occasionally. In a 10" skillet bring the stock to a boil; add the onions and cook and stir 2 minutes. Add the carrots; cover and cook another 2minutes. Add the broccoli and cook and stir another 2 minutes. Strain the tofu mixture, but reserve 2 tbsp of the marinade. Add the tofu mixture to the skillet, cook and stir gently 1 minute. Add the reserved marinade and olive oil; toss well. Makes 4 servings

I like this served with brown rice cooked in fat free chciken broth.

Patti, do you like Lo Mein recipes? There's a recipe in our newspaper today for Vegetable Lo Mein and it has tofu in it. If you think that you might like it, I'll copy it here for you.

What other types of recipes using tofu are you looking for?

Tofu cabbage soup
Ingredients:

  • 1 Tbsp olive or sunflower seed oil
  • 1 small onion, quartered and thinly sliced
  • 2 cups firmly packed, finely shredded napa or savoy cabbage
  • 3/4 cup thinly sliced small white or brown button mushrooms
  • One 6 ounce can sliced water chestnuts, undrained
  • One 32 ounce carton low-sodium vegetable broth (or homemade)
  • 1 Tbsp lemon or lime juice OR 1 tsp rice vinegar
  • 1 Tbsp low sodium soy sauce - or soy sauce of your choice
  • Salt and freshly ground pepper to taste
  • 1 cup snow peas or frozen peas
  • 8 ounces extra firm tofu, cut into 1/2 inch dice
  • 2 Tbsp minced parsley
Soup Directions:

  1. Heat the soup stock to boiling in a separate sauce pan.
  2. Heat the oil on medium low in a large soup pot
  3. Add the onion and sauté until transparent
  4. Add the mushrooms and sauté another few minutes
  5. Add the cabbage, and snow peas if you're using them. Sauté just until wilted
  6. Add the frozen peas if using, tofu, soup stock, lemon or lime juice or vinegar, soy sauce, salt & pepper to taste
  7. Cover and simmer over low heat for 5 - 10 minutes
  8. Remove from the heat. Add parsley and serve at once
Note don't over cook veg as you will get a strong cabbage flavour
