Brandy Snaps

I am looking for a Brandy Snap cookie recipe; they are paper thin wafers and you roll them and fill them with brandy whipped cream. Anyone have a recipe like that? I know I had the recipe,but it has been misplaced; please help!

Cat Lover,

Here is a recipe for Fortune Cookies, could you use it to make the cookie part?

Fortune Cookies

3 Tablespoons butter or margarine (softened)
3 Tablespoons granulated sugar
1 egg white
1/2 teaspoon vanilla or almond extract
1/3 cup flour
2 teaspoon orange rind (optional)

Write fortunes with predictions of happines, good health and prosperity on small strips of paper.

In small bowl beat together first four ingredients. Stir in flour.

Drop rounded teaspoon of batter on lightly greased cookie sheet; spread into 3 1/2" circle. Bake 4-5 minutes at 400 degrees or until lightly browned.

Quickly loosen cookies with wide spatula and flip over. Put fortune in center; fold cookie in half and then fold again over the edge of a bowl.

Makes about 20 cookies.

Well, they do seem to be able to be folded after baking so maybe if I do it quick they could be rolled.

Maybe you could use a dowel stick to roll them on and have more room to fill with the cream.
