Parmensan-Chicken Salad
4 boneless skinless chicken breasts----1t. salt----1/2 t pepper----2t vegetable oil----3/4 cup of shredded parmesan cheese----3/4 cup of mayonnaise----1/2 cup of chopped pecons that are toasted----1/2 cup of celery, chopped----1/3 cup green onions, chopped----1 clove of garlic, pressed----2t spicy brown mustard...............Sprinkle chicken with salt and pepper, cook in hot oil in a large skillet over medium heat 7 to 8 minutes (on each side) or until done. let chicken cool. Chop chicken and stir chicken, cheese and remaining ingredients. Cover and chill for 2 hours or more. ...Serves 4....Server over lettuce, as a sandwich or on crackers......
