So stuck for side dish ideas

I am so stuck for side dish ideas.

My kids don't like any kind of potatoes that are French fries or hash brown patties--unless it is mashed potatoes in periogies. My DD will eat canned potatoes that have been fried once in a while.

My husband doesn't like very many veggies but that doesn't bother me if I can find kid-friendly veggie recipes too.

I am really tired of noodles and rice.

Any suggestions on side dishes that aren't too bothersome to make?

We're not big potato eaters here either (just me).

Maybe you could bake your own potato and make the noodles/rice for the rest of your crew.

It doesn't sound like the vegetables are as much of a problem as the starch....

It looks as though I am going to have to start doing this. I did this for so long when I was low-carbing anyway.

I just wish that I could find some ideas that would make us all happy.

I always find side dishes to be easy; it is the main dishes I have trouble coming up with! lol Here are some ideas:

pierogi lasagna
pinto beans
baked beans
macaroni and cheese
potato salad
cole slaw
Spanish rice
broccoli and rice casserole
macaroni salad
corn casserole
spaghetti squash patties
creamed spinach
tomatoe pie

There are some others that I can think of, but I bet your kids would not like them such as fried okra. lol I have seen a restaurant commercial for things such as fried green beans and fried macaroni and cheese. It seems that they dip a glob of mac and cheese in a batter or 2-3 green beans in a batter and then deep fry them. That does sound so good, but I haven't tried it.
