Thumbs up What is in your favourite salad?

It is hot, and we need some dinner/ side salad recipes! We are trying to eat healthier, but I am not very well versed at it. I am not a salad enficianato (sp?) but would really love to be! (I am sure I can't be the only one?) Would you share some of your delicous, fresh salad recipes!?

Cat, I am just curious as to what kinds of salads people eat. I have NO imagination when it comes to salad, but would love to serve them in my home more often. I just open a bag, add some chives and maybe raisins, and that's it. Yawn

Here are a few:
I love Coleslaw and have lots of different recipes for them. The one I pick depends on time I have to prepare it and the ending flavor I want to go with the rest of the meal. Two of our favorites are a Regular coleslaw that I make my own dressing for and another one is a German style with hot oil and vinegar among other itmes in the dressing. If you want those recipes let me know. But the following one is a QUICK coleslaw I make sometimes; it is good and works for the quick time!'

Quick Coleslaw

Shred 1 small head of cabbage. Cut into small pieces 3 stalks of celery,and 1/2 cup green pepper. Chop up 1 small onion. Blend together. Using either homemade or bought coleslaw dressing (3/4 cup) add 1/2 tsp celery seed, and 1/4 tsp salt. Toss the dressing mixture with the vegetables and refrigerate at least a couple hours; stir and serve.

I also make different types of salads again depending on the rest of the meal, some have fruit in them and some are different lettuces with different vegetables added and different dressings instead of just store bought. Let me know if you want me to include others here, no problem!

My favortie salad is romaine lettuce mixed with some baby greens, sugared pecans, dried cranberries and blue cheese with raspberry vinagrette!!!!

My friend invited me over to lunch and served this incredible salad:

garbanzo beans
red beans
shredded cabbage
chopped jicima
fresh corn kernals
chopped tomatoes
chopped red onion
chopped chives

She tossed it with a dressing made from Hidden Valley Ranch with a little bar-b-que sauce and lemon juice.

She served it up fresh and cold and it was awesome!!

I like "Steakhouse Salad"

Left-over london broil or grilled steaks
Dressing:
1/3 cup olive oil
3 tablespoons red wine vinegar
2 tablespoons lemon juice
1 clove garlic, minced
1/2 teaspoon salt
1/8 teaspoon ground black pepper
1 teaspoon Worcestershire sauce

Salad:

3/4 cup crumbled blue cheese
8 cups romaine lettuce - rinsed, dried, and torn into bite-size pieces
2 tomatoes, sliced
1 small green bell pepper, sliced
1 carrot, sliced
1/2 cup sliced red onion
1/4 cup sliced black olives

Directions
Slice steak into bite size pieces.
In a small bowl, whisk together the olive oil, vinegar, lemon juice, garlic, salt, pepper and Worcestershire sauce. Cover and place dressing in refrigerator.


Arrange the lettuce, tomato, pepper, onion, bleu cheese. and olives. Top with steak and drizzle with dressing. Serve with crusty grilled French bread.


( Spinach Salad is good too... Just baby spinach leaves, hard-boiled eggs, bacon crumbles and shredded mozzerella cheese. I use a bottled poppy-seed dressing. Very good.)
