What's your favorite ways to use up Christmas leftovers?

We had ham sandwiches with the leftover ham from Christmas Eve and now we still have some more to eat. I'm sure that it will get eaten this weekend or I will put it into the freezer.

We have ham. I cut it up and seal it in bags for the freezer. At some point, I will use it for ham and bean soup or just ham and veggie soup. Scalloped potatoes with ham in it. Casseroles. I sometimes add it to scrambled eggs or an omelet.
Grilled ham and cheese sandwichs.
Sometimes fry a few slices and have it with eggs or pancakes or even for supper with potatos and veggies.

We have a big treat on Christmas Day. I get a beef tenderloin on sale and cook it as a roast. I make sure to get one large enough so we get a second meal out of it. (The kids call this "Christmas meat" because that's the only time they get it!)

Then after dinner I immediately freeze the leftovers before Big DS gets his mitts on it for a midnight snack

We will enjoy a nice dinner of Beef Paysanne soon.

We have turkey on Christmas Day...I will make Turkey stew...Turkey Pot Pies...and cube up the rest and freeze it for later use...

We always have ham for Christmas dinner. For breakfast the next morning we love fried ham and eggs. I will also use it to make ham, broccoli and cheese stromboli. I make bean or split pea soup with the bone and some of the meat. None of it goes to waste!

I use the bone for my soups also. There is so much you can do with leftover ham or turkey.
