Chocolate Cookie Pudding
From Southern Living Magazine
1- 5.9oz pkg of chocolate instant pudding
2 cups milk
1 - 3 oz pkg cream cheese, softened
1 - 8 0z container of cool whip
16- oreos... recipe calls for double stuff... I think regular is ok too
about 2 cups crushed
3/4 cup chopped pecans
Whisk together chocolate instant pudding mix and 2 cups milk for 2 minutes.
Cover pudding and chill 5 min.
Stir together cream cheese and whipped topping, blending well.
Place 1 cup crushed cookies evenly on bottom of an 8 cup bowl.
Spread half the cream cheese mixture over the crushed cookies; sprinkle with half the pecans. Spread all of the pudding over top; spread the remaining cream cheese mixture evenly over the pudding. Sprinkle with remaining cookies and pecans. Chill until ready to serve.
Variations:
Mocha chocolate cookie pudding:
Crush 16 coffee cream filled sandwich cookies.
Stir in 2 T strong brewed coffee into cream cheese mixture.
Omit pecans.
Chocolate Peanut butter cookie Pudding:
Crush 16 peanut butter cream filled cookies
Substitute 1/4 cup creamy peanut butter for cream cheese and 1 cup dry roasted peanuts for the pecans
