as posted by melly in the January 2005 What's for Dinner? thread. Salisbury Steak
1 can (10 oz) cream of mushroom soup, divided
1 lb of ground beef
1/3 c dry bread crumbs
1/4 c finely chopped onion
1 egg, beaten
1 TB vegetable oil
1 1/2 c sliced fresh mushrooms ( I've use the jar also)
Mix thoroughly 1/4 c of soup, beef, bread crumbs, onion and egg.
Shape into patties.
In a skillet, over med-high heat in hot oil cook half of the patties
until brown on both sided. Remove and set aside. Repeat with the
rest of the patties. Pour off the fat.
In the same skillet stir in remaining soup and the mushrooms. Return
patties to the skillet. Reduce heat to low. Cover, cook 20 minutes
or until patties are done.
I usually serve it over egg noodles.
The family loves it.
