I'm working on getting my pantries inventoried and organized as well. I have been terrible in the past about not using stuff up and forgetting what I have.
Next up is the freezer. It always seems to be really full, but I keep using up the newest stuff and restocking. Definitely going to do that this week.
Ellen, I just used up the last of the baking supplies from last Christmas when I did major stockup of items on sale.
kathy, my dh does not understand why I keep my upstairs freezer full of grains and flours but then he complains when they get buggy even when in plastic storage bins in the kitchen. This is the only way I can keep the grain moths out, to use cold storage.

Me too on grains in freezer.I have gotten bugs in things in airtight plastic containers. DH does not get this. I thing stuff comes with eggs in it...don't know? Anyway the freezer works well to keep dry goods in.

I agree on the eggs, and just freezing them for a short term sometimes works, but then the pantry moths get into them and there must be some kind of moth that is even resistant to bay leaves because that stopped working too...

I keep my expensive grains in the freezer because yes those bugs hatch right out of the product so unless you freeze it you will get them eventually.
I redid my pantry and deep freeze a couple months ago and made a list of the freezer items. The pantry is organized like a grocery shelf, same from front to back and my "extra" canned good shelf has a written list. My spices has drawers (for the extras) and they have a list also. I will only buy on sale so I really stock up when it is things we use and a really good price, plus a coupon helps also if I have one.
My pantry is an 8 x 10 with shelves that go up 8 feet high and storage on the bottom for 5 gallon pails for bulk items. So as much as I would like to do this challenge we'd be forever just using what we have. Since we are iced or snowed in a couple times a year or more (even flooded in sometimes) and grocery (one in town) is a 20 mile round trip and bigger ones are at least a 60 mile round trip that all plays a big part in the way we shop and store items. But this sounds like a fun idea and will watch what others do and how they use their items; maybe I'll get some new ideas for cooking
