Muffin Mix Directions?

Hi! This is my first time to post.
I am looking forward to meeting everyone here.

I enjoy making and using mixes for saving $$$$$. I am looking for help on the Muffin Mix I got from the above site. Here's the receipe:

Muffin Mix

8 c Unbleached All-purpose Flour
1/3 c Baking Powder
1 c Vegetable Shortening
2/3 c Sugar
1 tb Salt


In a large bowl, combine flour, sugar, baking powder and salt. With a pastry blender, cut shortening into dry ingredients until evenly destributed. Put in a large airtight container. Lable as MUFFIN MIX and stor in a cool, dry place. Use whthin 10 to 12 weeks. Makes about 10 cups of MUFFIN MIX.

Now here's my problem. How do I use this mix to make my muffins? Has anyone used this before? I'm hoping someone can share therie TNT instructions or another muffin mix receipe.

The recipe you used is the same as the one I have in my Make a Mix Cook Book. Here are some recipes:

Melt In Your Mouth Muffins

2 1/3 cups muffin mix
1 egg
1 cup milk

Preheat oven to 400F (250C) Butter muffin pans. Put Muffin Mix in a medium bowl. Combine egg and milk in a small bowl. Add all at once to Muffin Mix. Stir umtil mix is just moistened; batter should be lumpy. Fill prepared muffin pans 2/3 full. Bake 15-20 minutes, until golden brown. Makes 12 large muffins.

Variations:

Jelly Muffins: Fill each muffin cip 1/3 full with batter. Drop 1 tsp jelly on top of batter. Fill cups 2/3 full with remaining batter.

Cheese Muffins: Add i cup grated Cheddar Cheese to Muffin Mix before adding liquid ingredients.

Banana Muffins: Add 1/4 tsp cinnamon and 1/4 tsp nutmeg to Muffin Mix. Mash 1 banana and add to liquid ingredients before adding liquid to muffin mix.

Blueberry Muffins: Add 1 cup well-drained bluberries to liquid ingredients before adding liquid to muffin mix.

Whole-Wheat Muffins: Combine 2/3 cups whole-wheat and 1 1/2 cups Muffin Mix in a medium bowl. Proceed as directed in original recipe.

Thank you so much!!! I've had this receipe for some time but no idea how to use it. I'm going to make the Melt-in-Your-Mouth right now with some cinnamon added and sprinkled on top. Sounds delish!

I am going to love it here at FC. I love getting and sharing receipes .

I had been to the first site on the list a long time ago and had forgotten all about it. I love the Impossible receipes on this site. There are quite a few I hadn't seen before and will be trying out soon on my family.
I like to serve these for a fast dinner on busy nites. Thanks for sharing.

Amanda and all,

Thanks for the great sites for mixes. I usually base my Christmas gifts around a mix. Maybe these will get my creative juices flowing again.

Here's an idea I used one year....I gave a bag of homemade Biscuit mix. I put it in a biscuit bucket with a liner, recipe, and a jar of homemade jelly.

Has anyone gone to budget101? I used to go there alot. Maybe more ideas there.
