Hi...
I'm not sure if you just want a sauce or want to make baked macaroni and cheese.....so either way this will work.....
I'll give you the baked macaroni and cheese recipe, but you can use the cheese sauce without baking.....
I am going to give you instructions for 1/2 lb of raw macaroni.....
a half pound will feed 3 very generously .....just double for 1 lb
1/2 lb elbow macaroni
3 Tablespoons butter
1/3 cup all purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper or to taste
2 1/2 cups whole milk
2 cups grated sharp cheddar ( you can get an 8 or 10 ounce bar of cheese and grate it)

Put water on to boil and cook elbows for no more than 4 minutes......drain and transfer to casserole.
In saucepan, melt butter, blend in flour and salt.
Cook stirring constantly until it bubbles and its thickened.
Add the milk, and stir constantly.
When the milk is hot add all but 1/2 cup of the cheese.
Add the pepper..
Stir and cook until thick.
Pour over the elbows in the casserole, stir to incorporate.
Sprinkle with remaining cheese
Sprinkle with paprika...
Bake in a preheated 375 degree oven for 25 minutes.
