| Southwestern Beef 'n Rice Stuffed Peppers
1 lb. lean ground beef
1/4 c. chopped onion
1 (1.25 oz.) pkg. Old El Paso Taco Seasoning Mix
1 egg, beaten
2 c. cooked rice
4 medium green bell peppers
1/2 c. Old El Paso Salsa
1/2 c. water
1/4 c. sour cream
2 oz.(1/2 cup) shredded Cheddar cheese
Heat oven to 375. In large bowl, combine ground beef, onion, seasoning mix & egg; mix well. Add rice; mix well.
Cut bell peppers in half lengthwise; remove seeds & membrane. Place cut side up in ungreased 13 by 9 inch (3 qt.) glass baking dish. Spoon beef mixture into peppers, mounding as necessary. Top each with 1 Tbsp. salsa. Pour water into dish around peppers.
Bake at 375 for 35-40 min. or 'til beef is thoroughly cooked & peppers are crips-tender. Top each w/ about 1/2 Tbsp. sour cream and 1 Tbsp. cheese.
