Post Lowfat Menu Ideas for a Cookout

We usually have a cookout with my family sometime every summer. This year I would like to keep it primarily lowfat . Please give me all of the ideas that you can think of. We will probably be grilling the main course, whatever it ends up being.

When we BBQ I like to make a pasta salad to go with it. Here is my basic recipe:
1 package of pasta (pick a small shape)
1 cucumber seeded and diced
1 bell or red pep. seeded and diced
1 bottle fat free italin dressing ( i use "kraft free")
1 tblsp or to taste of Mccormick Salad supreme Seasoning

i usually dice up some diiferent cheeses like jack, mozzzerella, or extra sharp chedder but if you want to keep it lowfat you better skip this step!

i don't use the whole bottle of dressing at once. start out just to moisten it and add more when you serve it..the pasta usually soaks some up!

Grilled Grapefruit

3 grapefruits
1 tbl. sugar (use splenda instead)
1/2 tsp. cinnamon

Preheat the grill to a medium-high heat. Slice the ends off the grapefruit. Cut 3/4 inch thick rounds, yielding about 3 or 4 slices. Combine the sugar and cinnamon. Sprinkle the sugar mixture on both sides of each slice. Grill the grapefruit for 5 minutes or until the slices are hot and the sugar begins to caramelize. Make sure to turn the slices halfway through cooking.

Grilled Vidalia Onions

2 large Vidalia onions (3/4 pound each), sliced
2 tablespoons olive oil

Toss onions with olive oil until well coated. Place on the grill and cook for approximately 5-7 minutes over medium heat, or until onions turn golden brown.

Pork Tenderloin with Herbs

1 pork tenderloin
4 tbs. extra virgin olive oil
2 tbs. fresh or 1 tsp. dried rosemary
2 tbs. fresh or 1 tsp. dried thyme
2 tbs. fresh or 1 tsp. dried chives
2 tbs. fresh or 1 tsp. dried parsley
1 tsp. freshly ground ginger
2 tbs. kosher salt
1/2 tsp. cayenne pepper
1 tsp. ground cloves
3 tbs. garlic, minced
1 tsp. shallots, minced

Preheat gas grill on high level for 20 minutes or use charcoal briquette fire when the coals turn white. Lightly coat the pork loin with oil. Mix together the herbs, garlic and shallots. Roll the loin in the mixture, and prss mixture to meat. Grill the loin on high temperature for 20 minutes or until the meat is firm and slightly crispy on the outside. Remove from heat and allow loin to
"rest" for 5 minutes on a platter before slicing and serving.

chuckle Low Fat Cooking

I am Heather, married mother of a 4 and 2 year old. My husband and I are looking for low fat/healthy ideas on eating-things that we will enjoy as well as our kids.

Skinless chicken breast grilled is low-fat. If you are afraid it won't cook through, you can slice it thin or pound it thin. DM pounds it thin with one of those meat tenderizor mallets.

Bocca burgers are also low-fat.

You can make potato salad with fat-free mayo.

I always cut up potatoes, zuchini, carrots or something like that. I maridade it first in something low fat. I roll it up in foil and grill on grill. I have done this on the George Foreman grill also.

Veggies on the grill have become one of my absolute favorites this year. I think Ive tried just about every imaginable ! Some of my favorites are onions, mushrooms, eggplant & green peppers.

I just found a recipe for grilled Rosemary potato slices that Im going to try very soon. Sounds so good !!



We have surely been eating our share of boneless chicken breasts this year too.....so much so that Im surprised that Im not growing feather !!

Boca Burgers are another favorite of ours. I try to buy them when they are on sale.

Something else Ive just recently started making is grilled salmon. This tastes great and is good for you too !

I like the idea of making grilled pizzas too. You could even use fat-free tortillas as the pizza shell and then fill them up with veggies and low-fat cheese. MMMM!

Tonight we are having my version of low-fat grilled chicken quesidillas (sp) and corn on the cob-not grilled, dont like it that way.

I like Veggie Burgers! I eat mine on a bun with a slice of sweet onion along with catsup, mustard, relish....they are yummy! It reminds me of meat but its not! My DH grills them all the time and they work out well for us.

One of our favs is to diced up potatoes and onions, and some minced garlic, spray with olive oil (what would I do without my mister!!), and shake on some seasoning. Seal in a aluminum foil pack and place on the grill, turning a few times tfhoughout cooking. yummy!!

Also, my Dad slices zucchini the long way and grills it, coating with BBQ sauce near the end. Yum!!

Sounds great! I'll have to try your Dad's Zucchini's recipe for on the grill too! Yummy.

We also like to put all kinds of veggies in a foil pouch and add Ms. Dash for seasoning and spray butter...yum yum!
