| Quinoa Pilaf
2 tsp olive oil
1 bunch scallions
1 large carrot, diced
1/2 large red bell pepper, diced
1 stalk celery, chopped
1 cup quinoa, thoroughly rinsed
2 cups fat free, low sodium chicken broth
Heat oil in a saucepan. Saute the vegetables for 5 minutes. Add rinsed quinoa and toast for 2 to 3 minutes. Add chicken broth and bring to a boil, cover and simmer 15 minutes or till all the water is absorbed and the quinoa is tender. Serves 6
