This is a new one I recently had gotten from the lady that saves me her newspapers for my wood stove; it was so good and low in fat which I usually can't get many like that from friends! lol Not sure where she got the recipe, but she said she recently acquired it! I hadn't seen it in anything I read, but so glad she shared it!
1 1/4 cups whole wheat flour
1/4 cup all purpose flour
3/4 cup Splenda granulated sweetener
2 tsp baking powder
1/2 tsp ground cinnamon
1/2 tsp salt
1 1/2 cups mashed rip bananas
1/2 cup fat free egg substitute
1/2 cup no sugar added applesauce
1 tsp vanills
Preheat oven to 350 degrees. Coat a 9 x 5" pan with nonstick cooking spray. In a bowl combine all the dry ingredients. Mix well and set aside. In another bowl combine the remaining ingredients. Mix thoroughly and add to dry ingredients; stir just till mixed together. Spoon the batter into the prepared loaf pan and bake 50 minutes or till a toothpick inserted in center tests clean. 8 servings
