| Curried Chicken Spread 1/4 cup onions, minced 1 tbsp fat free chicken stock 1 tsp olive oil 1 boneless, skinless chicken breast, chopped 1 tsp curry powder 1/2 cup fat free sour cream OR plain fat free yogurt 1/4 cup scallions, sliced 2 tsp mango chutney In a skillet combine onions, stock and oil and cook 3 minutes. Add chicken and curry powder and cook and stir till the chicken is done. Put into a food processor and puree till smooth. Put in to a bowl and add sour cream, scallions, and chutney. Transfer to a bowl and cover and refrigerate 2 hours for flavors to blend. Makes 1 1/4 cups Per 2 tbsp: 50 calories 1.2 g total fat 0.3g saturated fat 17 mg cholesterol 0.2 g fiber
