Low Fat Patty Melts
1 pound ground turkey breast
1 cup cooked rice ( I use brown, but white works just as well)
2 tsp Nature's seasoning
1 tsp Mrs Dash onion herb mix
nonstick cooking spray
1 onion, thinly sliced
1/4 cup chicken broth
2 cups grated nonfat mozzarella cheese
8 slices thick rye bread
nonfat mayonnaise
Combine turkey, rice, 1 tsp of the Nature's seasonings and the onion herb mix. Shape into 4 patties about 4" in diameter and 1/2 tp 3/4" thick. Spray a pan with nonstick spray. Fry onion over high heat till browned adding the remaining teaspoon of Nature's seasonings. Add chicken broth to release the browned bits in the pan. Remove from the pan and set aside. In the same pan fru the turkey patties and broen on each side about 5 minutes each or till thoroughly cooked. During the last 2 minutes pur 1/2 cup cheese on each patty. Cover pan and cook till cheese melts. Spread both sides of rye bread with nonfat mayonnaise. Fry the bread in a nonstick skillet on one side. Put grilled onions on top of each patty and put the patty on the uncooked side of the bread covering with the other side of the bread. Serve with Dijon mustard or horseradish sauce.
Makes 4 servings with a total fat of 3.30 grams and saturated fat of 1.25 grams.
