| Low Fat Italian Sausage DH loves Italian sausage especially when it is on sale. I find if I take it out of the casing most of the fat is released during cooking. Adding extra fennel seed as I mix it gives it more flavor and makes it easier to digest. Seems they are not adding as much spices to the sausage lately.
Boiling the hand formed sausages in a little water covered gets rid of extra fat. Saute it with a little olive oil & garlic to brown. Once cooked can be used in all your favorite recipes or added to spaghetti sauce.
