Cinnamon Pumpkin Cake
Recipe came from Oct/ Nov 2005 Light & Tasty magazine
1 pkg. (18 3/4 oz) yellow cake mix (don't use cake with pudding in the mix)
1 can (15 oz) solid pack pumpkin
2/3 cup sugar
2 eggs (I used 4 egg whites)
1/2 cup egg substitute
1/3 cup water
1/4 cup unsweetened applesauce
2 1/2 tsp ground cinnamon, divided
1/4 tsp ground nutmeg
1 1/2 cups confectioners sugar
1/2 tsp vanilla estract
1 to 2 tbsp fat free milk
In a large mixing bowl, combine cake mix, pumpkin, sugar, eggs, egg substitute, water, applesauce, 1 tsp. cinnamon and nutmeg. Pour into a 10" fluted tube cake pan coated with nonstick cooking spray.
Bake at 350 degrees for 65-75 minutes or till a toothpick tests clean. Cool 10 minutes before removing from pan to a wire rack to cool completely. In a small bowl combine confectioners sugar, vanilla, remaining cinnamon, and enough milk to achieve desired drizzling consistency. Drizzle over cake.
