Low-Fat Taco Soup
1 lb. lean ground beef or ground turkey
2 cans pinto beans
2 cans hominy
2 cans whole kernel corn
2 cans tomatoes
1 can Ro-Tel (or diced tomatoes and green chiles)
1 pkg. taco seasoning
1 pkg. Hidden Valley ranch dressing mix
Brown meat in a large pot, seasoning to taste. Add remaining
ingredients, including juices from cans, and simmer for about
1/2 hour.

This morning I left out the hominy and added two cans of mexican style beans. I always rinse the beans to reduce the salt and make homemade taco seasoning for the same reason. It would be nice to have a "recipe" for the ranch dressing so I could cut the salt from that as well. Petite frozen corn works well I use a small bag. My family cheers
for Taco Soup! I do too because you can't mess this one up. Shhhh....The calories really come from the white corn chips we serve on the side.
