This recipe reduces the carbohydrates in the sauce!
14 oz frozen green beans, thawed 8 oz mushrooms. sliced 1 large onion sea salt, to taste pepper, to taste 1/2 tsp dried thyme 1 tbsp butter 1 1/2 tbsp wheat flour 3/4 cup unsweetened soy milk 1/4 cup almond meal
TOPPING: Slice the onion into thin slices. Put small amount of butter into a skillet and put about 3/4 of the onion slices into the skillet and let them slowly cook. When they get soft add some seasoned salt (small amount). Then remove form the skillet and toss with 1/4 cup almond meal.
Preheat oven to 350 degrees. Saute the remaining onion and mushrooms in butter. Add the salt, pepper, and thyme, stir and add the wheat flour stirring ofr a minute or two. Add the soy milk and simmer 1 minute. Mix this with the beans and put into a casserole dish and bake for 1/2 hour. Spread the TOPPING on top and bake another 5 minutes or just till the topping begins to brown. Makes 8 servings
