Spicy Baked Shrimp
1 lb. shrimp, peeled & deveined
1/2 cup olive oil
2 tbs. cajun or creole seasoning
2 tbs. fresh lemon juice
1 tbs. chopped fresh parsley
1 tbs. soy sauce
pinch of cayenne pepper
2 cloves garlic, chopped
1 tbs. Splenda
Combine all ingredients except shrimp in a 9 x 13
baking dish. Add shrimp, toss to coat. Refrigerate
one hour. Preheat oven to 450 degrees, bake until
shrimp are cooked through, stirring occasionally,
about 10 minutes. Garnish with lemon wedges.
