Another really good treat is pork rind nachos.

Put a few nachos on a plate, sprinkle some shredded cheddar cheese on top. Cook in the microwave to melt cheese (watch carefully). Spoon a couple of TBSP salsa (watch carbs!) on top. This is really good using jalapeno cheese.
