| Vegetable Quiche Cups to Go
Here's a recipe from the South Beach Diet Book. Vegetable Quiche Cups to Go
1 Package (10 oz) Frozen Chopped Spinach
1 1/2 Cups of liquid egg substitute
1 Cup shredded reduced fat cheese
3/4 cup diced onions
3/4 cup diced green bell peppers
Hot pepper sauce - up to 4 drops (optional)
Microwave Spinach for 2 1/2 min on High
Drain liquid - squeeze out all water
Line a 12 cup muffin pan with foil baking cups
Spray the cups with cooking spray
Combine egg substitute with cheese, peppers,
onions and spinach in a bowl. Mix well. Add mix
evenly to 12 muffin cups. Bake at 350 for 20
minutes or until a knife inserted in the center

Haven't tried it yet but my friend swears by it.
He freezes them individually and nukes them
in the morning.
