Low Carb Dinner Ideas Since there are so many of us who are on one of the low carb diet plans, I thought that I would start a place where we could share menus, recipes and ideas.

Low Carb Snack Ideas

Here is where we can share those sought after snacks and desserts.

Please post if is just a low-carb recipe or if it is from a certain plan ( Atkins, South Beach......)

One of my favorites is turkey pepperoni chips--just nuke sliced pepperoni until crisp

more later......

I bought a big bag of almonds at Costco, and I usually just measure out 1/4 cup in a little bowl.

Another snack I like is 1/2 an apple sliced with almond or peanut butter on it.

String cheese sticks, pork rinds, hard boiled eggs, deviled eggs, egg salad, deli sliced meats rolled up

I'm on the Protein Power Plan by Michael and Mary Eades, MD

Fried mozzarella sticks-YUMMY!

Cream cheese stuffed peppers or for me...jalapenos.

A hamburger is usually a good snack and quick...with different toppings like guacamole, or monterey jack and jalapenos...

Tuna fish...

Deviled Eggs

Hard Boiled Eggs

Steak or Beef Stew meat w/ a tiny bit of bbq sauce

sliced cheese

salad-all kinds...california style with cheese, tomato and a half of avacado to a simple spinach salad

Cheesesticks...Ooh...I made those for lunch!!!

I've got to add one thing...I think I posted that you should make an egg wash to dip the cheese sticks into but I figured that it shouldn't be a wash but just the egg whipped. The wash makes it too loose and the atkins mix doesn't adhere to it like it does the regular egg. Also, make sure the oil is very hot and quickly turn it and take them out-FAST. I didn't have ranch dressing this time so I used Italian and it was good!!!

Also, a good snack is a banana. I get my potassium in and have a good snack.

How do you make those chips out of turnips? I bought some today. Do I have to peel them first?
I plan to slice them real thin then fry in olive oil. Is that right?

Saw this article in Sundays paper about a co. that sells LC buns, muffins, rolls etc. www.osolo.com . They have a store locater and are supposed to be around the US.
I'd loooove to have a real sandwich right about now.

I made some zucchini sticks today!

I did the exact same thing as the mozzarella sticks...my oil was up too high though. The high elavation we're at-(here in Pueblo, Co.) also affects cooking time, I've been noticing that lately...so it was crispy but wasn't soft inside. I'll try it the next time at a lower temp.

Low carb bread sounds really good. I want to get some low carb pasta to make some spaghetti, they have it on sale at the local health food store for $1.99, I may get it later.

LJsmom, I havent made chips out of turnips but I did fry them like you would fry potatoes.....they are great!! One thing that I would recommend would be to drain them afterwards on paper towels so that they dont get soggy---they do very fast.

Im think of staying in the induction phase for two more weeks after this one---only adding some yogurt and maybe a couple of other things into this.

Its working but I really hate the way I look in a mirror.

Forgot all about zuchinni strips! That sounds really good!!

I just went and bought some Jicama

It's a mexican turnip/fruit thingy that were supposed to be able to eat. It was .79 cent a lb. I also got a paper that said that there was a sale on Low carb spaghetti for $1.99 at a health food store...I went to the wrong health food store, so I got some low carb rotini for $2.35 instead but forgot the spaghetti sauce...I also got some La Factory Tortilla's, it was only $1.65 for 6...I just wanted to try it cause I've heard good things about it. I could get some low carb ones by Mission tortillas with 12 in them for $2.99, but I think these are the same ones used by Subway...so just wanted to see... I also got some nuts-(phase 2 and beyond)-some almonds, walnuts, and pecans...which were on sale at Walgreens-2 for $3...which is cheaper than in the stores AND the farmer's market. So, I got 4 total...now I can use it in recipes for dd and for my snacking.

Hey, where's Songberries??? I haven't heard from her in a few days? Let us know how you're doing!!!

OH NO

Wasn't it turnips that you can fry like chips? Did I get the wrong veggie?

Leasmom, I put jicama in my salsa when I make it. Adds a crunch but really no extra taste. I found it hard to peel and chop-but maybe I got one that was still too ripe...? What else can you do with them?
