| Peanut Butter Protein Bars
3 tbsp sf peanut butter
2 tbsp butter
4 oz cream cheese
1/4 cup splenda
1 tsp vanilla extract
2.5 scoops vanilla protein powder
Melt butter, p-nut butter & cream cheese in microwave. Mix in splenda & vanilla. Add protein powder 1 scoop at a time, you will need to use your hands towards the end. Press into small baking pan & chill until firm. Makes approx 6 bars at 3 carbs each.
Variations:
1. Make two layers, one with vanilla protein powder, and one with chocolate. (cut these into smaller portions as they are doubled)
2. German chocolate type bar: Make one layer chocolate (add melted unsweetened chocolate to make it fudgier) and add extra splenda to compensate for the extra chocolate if usign unsweetened). The second layer, omit the peanut butter and add 1/2 cup pecan pieces and 1/2 cup coconut.
