3 chicken breast cubed (or left over chicken, deboned 1 cup or more)
1 lb. Velveeta cheese (or store brand)
1 can Rotel or tomatoes and chilis (hunts, Libby, and Kroger all make one)
1 lb. thin noodles cooked aldente ( don't over cook)
1 can turkey chili (Hormel) with beans
1/2 or to taste sour cream.
optional: 1 can black olives drained, and/ or 1/4 cup roasted peppers diced (add with chicken)ENJOY!
While the noodles are cooking in salted water, melt cheese with the Rotel and chili in a double boiler or in the mirowave. Cook chicken until done. Drain noodles when done, Put back into pot. place done chicken on noodles. Stir sour cream in cheese mixture and pur over chicken and noodles. Toss to coat. Place in serving dish ( for company) and sprinkle chedar cheese over top for garnish.
