Hobo Eggs

My husband's granny taught the grandkids and great grandkids to make these eggs. I have no idea where the name for them came from.LOL

2(or more) slices bread with a square cut out in the middle of each piece(save these pieces)
2(or more) eggs
margarine
Melt enough margarine in a skillet to fry the bread and eggs. Put in a slice of bread with the center cut out and crack an egg and add it to the center. Put the cutout from the slice of bread in with the margarine, bread, and egg. Fry the egg until set on the bottom then turn over and cook until set on top. You should end up with buttered toast and eggs.

I remember making this in home ec in school.....I can't remember what we called this egg dish......

When I make them, I call them bird in the nest but my mother called them one-eyed Susans. lol

We used a glass to cut circles out for the eye and called them Popeye's when I was a kid.
