Happy face Stir-Fry

1 Pound package of skinless, boneless chicken.

1 tablespoon of oil.

1 16 ounce package of frozen stir-fry vegetables.

1 8 ounce can pineapple chunks with juice.

2 3-ounce packages of ramen noddles.

2/3 cup of stir-fry sauce.

1/2 cup of water.

Cut chicken into bite size pieces. Add oil to skillet and cook chicken in skillet at medium-high heat. Cook about 6 minutes or until chicken is no longer pink Add vegetables and cover skillet with lid. Cook for about 7 minutes or until vegetables are tender but still slightly crunchy.

Break block of noddles into small pieces. DO NOT USE SEASONING PACKETS. ( I save the seasoning packets to season rice for another time.)

Add pineapple chunks and juice, noodles, stir-fry sauce and water to vegetables and chicken. Stir until the liquid covers all the pieces. Bring to boiling heat then lower to medium-low heat. Cover and cook about 4 minutes or until the noddles are soft. Stir every now and then. .........Serves 4......
