What's For Today's Packed Lunch, August 2007

I did not realize how very excellent a packed lunch during warm weather can be! Today I packed a turkey, provolone, wheat, mustard, spinach, and tomato sandwich with chocolate milk, 2 canada mints (got them to preserve mint pears later in the summer), celery sticks, buttered popcorn minis, iced mint tea, and the best part, watermelon!

On a full work day, with the heat coming in through the windows, and no breeze, it was pure delight and I am very glad I saved that part of the lunch for last.

Today's packed lunch is a ham sandwich with lettuce and tomato, carrot sticks, more watermelon, iced tea, strawberry milk, chocolate sandwich cookies, cottage cheese and blueberries.

Freestone peaches are almost in and I can hardly wait to can them to have them in my lunch this winter.

Wednesday was whole wheat bagel with cream cheese, an apple, and orange juice. It was a short morning and I had to run out the door, but it really saved my butt that my dd1 was driving so I ate in the car for breakfast and then had the meeting bagels for lunch.

one of the things my dh loves in his lunch is the Pasta salad, I prepare it ahead of time let it get nice and cold, then dish some out to him. One box normally last him 2-3 nights depending on what else I might have in his lunch.

I also get the can fruits to put in his lunch. I'll buy the big can and again dish out some to him.

I've done left over hot dogs,
fresh fruit
spam, vienea saugage, potted meat,

I do my best to change it around, but I run out of ideas too.

I like that idea of pasta salad, light enough for lunch yet also can be nutritious with added veggies and meats and cheese, hmmm.

My packed lunch today was skimpy: peanut butter and raspberry jam, creamed corn, fruit cup, raspberry tea, tomato salad, wheat thin crackers. And I only had the tea and sandwich and crackers for how busy we got at work. Good thing I had that chicken salad sandwich and strawberry milk for breakfast!

Yesterday and today were about the same with options being:

pbj sandwich
carob coated raisins
dried pineapple slices
wholewheat blueberry bars
marinated tomatoes
creamed corn
lite cheese doodles
cottage cheese and yogurt
tamari coated almonds
peach tea, green tea, mint tea - yes all in the same day, I get thirsty in this heat
chocolate milk
