| Matt's Healthy Pizza--Kids Cooking Contest Winner! This week's recipe was submitted to us by 10 year old Matthew in Norfolk, Massachusetts.
Matthew's Mom says, "Matthew loves to cook and because his two favorite foods are eggs and pizza, he came up with this recipe. It is easy to make, yummy and healthy too!". Matt's Healthy Pizza Tools Needed:
oven proof skillet sprayed with non-stick cooking spray
spatula
spoon Ingredients:
3 cups eggbeaters
4 T pizza sauce
1 cup shredded mozarella cheese
pepperoni slices (or other toppings of your choosing) Instructions:
Preheat oven to 400 degrees. Pour eggbeaters into skillet and cook in stove top over low-medium heat until firm (approximately 12 minutes). Do not stir or scramble the egg beaters. Let them sit as to create a "pizza pie" Remove from stove. Spoon on sauce. Sprinkle on cheese evenly. Top with pepperoni slices. Bake in oven for 10 to 15 minutes or until cheese is melted.
