Chocolate-Ice Cream Cups


Chocolate Ice Cream Cups

Ingredients
1 cup semisweet chocolate chips
1/4 cup butter or margarine*
1 tablespoon light corn syrup
1/2 teaspoon vanilla
3 cups Cheerios® cereal
1/4 cup sliced almonds, chopped
Favorite ice cream
Favorite topping


Directions
Place paper baking cup in each of 24 regular-size muffin cups. Heat chocolate chips, butter, corn syrup and vanilla in 2-quart saucepan over low heat, stirring constantly, until chocolate chips are melted. Remove from heat. Stir in cereal and almonds until evenly coated.

Divide cereal mixture among muffin cups. Press in bottom of each cup. Refrigerate about 1 hour or until firm.

Remove and discard paper baking cups.

Fill each with ice cream; top with topping. Serve immediately.

*Spreads with at least 65% vegetable oil can be used.

ice cream cups

I'm going to make these for Halloween for eyeballs using strawberry topping.
