Today is National Peanut Butter Day! What is your favorite recipe using Peanut Butter?
One of mine ( We love peanut butter) is
PEANUT BUTTER CUPCAKES
1/2 cup brown sugar 1/2 cup sifted all purpose flour 1/4 cup peanut butter 2 tbsp margarine, melted 1/2 tsp ground cinnamon
1/2 cup peanut butter 1/3 cup shortening 1 1/2 cups brown sugar 2 eggs
2 cups sifted all purpose flour 2 tsp baking powder 1/2 tsp ground cinnamon 1/2 tsp salt 1 cup milk
Combine sirst 5 ingredients till crumbly and set aside. Cream the 1/2 cup peanut butter and shortening. Slowly beat in brown sugar. Add eggs one at a time and beat till fluffy. Sift flour, baking powder, cinnamon and salt together and add alternately with the milk. Beat after each addition. Fill paper baking cups in muffin pan half full. Top witrh crumbly mixture. Bake at 375 degrees for 18 to 20 minutes. Makes 24 cupcakes,
My boys when they were little loved to take these in their school lunches!
The recipe was in a Better Homes and Gardens Cookbook when I was first married; way back in 1973! lol
