I love zucchini, but not when I cook it. I just has some at a restaurant and it was fabulous! It was sliced and cooked, it was soft with still a little crunch. It was so flavourful! How the heck do you do that?

I marinate it in a ziplock bag in whatever kind of marinate I have on hand. I have also marinated it in Italian dressing. I usually marinate it for about an hour. I do this with eggplant, also.

I slice my zucchini and if the peeling is tender I leave it on, dip it in flour and fry it in butter or margerine until lightly browned, Season with salt, pepper & garlic powder. I have never deep fried or grilled mine but it sounds good. Will try it.
