I have used zucchini in salads and soups. But like it sauted the best.

Here is another way to enjoy zucchini that's absolutely delicious. It's from The New Moosewood Cookbook by Mollie Katzen. Although I'm not a vegetarian, this book has some really nice recipes in it, and I recommend it for anyone's kitchen.


*Zucchini-Feta Pancakes*

4 eggs, separated (the yolks are optional)
4 packed cups coarsely grated zucchini (about 4 7-inch zukes)
1 cup finely crumbled feta cheese
1/2 cup finely minced scallions
1 tsp. dried mint (or 1 Tbsp. fresh, finely minced)
a little salt to taste
lots of black pepper to taste
1/3 cup flour
oil for frying
sour cream or plain yogurt for topping

Beat the egg whites until stiff.

In a medium-sized bowl, combine zucchini, egg yolks (if you're going to use them), feta, scallions, seasonings, and flour. Mix well.

Fold the egg whites into the zucchini mixture.

Heat a little oil in a heavy skillet. When it is very hot, add spoonfuls of batter, and fry on both sides until golden and crisp.

Serve immediately, topped with sour cream or yogurt.


Don't let the name of this dish fool you- they're savory, not sweet, so you can serve them any time of day- breakfast, lunch, or dinner!

I like to cut up zucchini for an addition to veggie trays and eat it raw with ranch dip. Great in salads with cherry tomatoes mmm good.

Here's a recipe I tried today. Sounds funky, but boy is it scrumptious!!!!

Zucchini Jam
3 C peeled and grated zucchini
1/2 C lemon juice
1 - 3 oz. pkg. jello (any flavor you want)
3 C sugar.
Bring zucchini and lemon juice to a boil and boil for 10 minutes. Add jello and sugar, bring back to boil, and boil for 6 minutes.
Makes 5 jelly jars. I topped with paraffin, then lids.
Super easy and OH so good. I made strawberry today, and plan to make peach tomorrow.
Can't tell it's zucchini, as it cooks down. It just adds the pulp of jam.
(Could use yellow squash peeled, but need to de-seed)
IT"S REALLY YUMMY. GIVE IT A TRY IF YOUR FRIG OVER FLOWETH WITH ZUCCHINI _ LIKE MINE!!!!! LOL

I make a low carb pizza crust with shredded zucchini; it is great! It is more like a quiche crust, but I can eat pizza this way! Here is the recipe:

3 1/2 cups shredded zucchini
3 eggs
1/3 cup rice protein powder OR soy powder
1/2 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
two pinches dried basil
1/2 tsp salt
1/4 tsp pepper
Sprinkle the zucchini with a little salt and let it sit for 15 to 30 minutes. Put it into a stainer and press out the excess moisture. Beat together the remaining ingredients with the strained zucchini and spray a 9 x 13" pan with cooking spray and spread the zucchini mixture in it. Bake at 350 degrees for 25 minutes or till firm. Brush with a little oil and broil 5 minutes till golden. Spread on your pizza sauce, cheese and any other toppings and bake about another 25 minutes.
