Banana Butter

Here is my recipe... this is really good, you will need a 10 oz. size jar of Marachino Cherries. I don't know if you could use rhubarb or not??

Banana Butter

3 ½ lbs. Ripe bananas
3 cups sugar
½ cup lemon juice
½ cup finely chopped red maraschino cherries
1 tsp. Butter or margarine
Through mash bananas: measure 4 cups into 4-6 quart kettle or Dutch oven. Add sugar, lemon juice, cherries, and butter, mix well. Bring to a hard rolling boil, stirring constantly. Reduce heat: simmer gently, uncovered. 20 minutes, stirring often. Pour into hot jars, leaving ½ inch headspace. Adjust lids. Process in boiling water bath (half pints) 10 minutes. Makes 6 half pints.

You are very welcome. It's a good way of using up banana's too besides of course banana bread.

slscoley, this link takes me to the user loggin page for WebCT for the University of Georgia for online classes. However, it doesn't show that it is a preserving class and it doesn't show that it is free. It would be nice if you sent the link for the details of the class and the the cost, if it is free.

If you get a chance, pop over to the Introduce Yourself thread so that others may greet you.

Slscoley, thanks for clearing that up. I have heard of colleges giving free classes at local universities for things like this, but this is the first that I've seen them give them online. WebCT is easy to use too.

We appreciate your input! Please don't be a stranger and jump and and join our family.

If anyone decides to give this class a go, let me know how it turns out. I am curious how an online free class would would out.
