| Venison Roast

venison roast, boneless, two inches thick, 2.5 lbs tops
rub with chili powder and sprinkle oregano on top
rub with some olive oil
place in a roasting pan
put thickly sliced onions around it
'roast' eight inches away from the low setting of broiler for 15 minutes
take out and put on broiler pan with the bottom side up
rub with chili powder, oregano, and oil
'roast' eight inches away from the low setting of broiler for another 7 minutes
let rest 5 minutes, maybe ten, then slice thinly and serve
