Looking for Rabbit Recipes

I am looking for Rabbit recipes. Something that is not a stew.

When I was young my family raised rabbits for meat. Mom often fried them just like she did chicken. She also made a dish that was like Chicken & rice with browned rabbit pieces are baked on a bed of rice with a cream of chicken or mushroom soup sauce pour over top. Sorry I don't have the exact recipe---just ideas.

Actually, any chicken recipe using cut-up pieces can be used with rabbit. The cooking times are similar, too.

If you type rabbit recipes into google, you will get pages and pages of places to get recipes using rabbit.

My favorite is a British recipe. You may have to find substitutes for some of the ingredients:

Stuffed Roast Rabbit
(Majorie Kyle)

1 whole rabbit
8 rashers (about 12 slices of "regular" American bacon) of streaky (at least 50% meat) bacon
2 tbls red wine

To make stuffing
1 can of apricots
50g (1/4 c) walnuts, chopped
juice of 1 orange
little grated rind
4 oz (1/4 c) bread crumbs
1 beaten egg
Salt and black pepper

METHOD:-

Cut apricots in pieces, place rest of stuffing ingredients into a bowl mix together with the apricots. Fill the rabbit with the stuffing. Preheat oven: 200C / 400F. Place rabbit in roasting pan, cover with bacon, and place tin foil on top for 1 hour. Remove foil and bacon, baste rabbit, roll the bacon and place rabbit and bacon rolls back in the roasting pan for a further 15 minutes. Take out of the oven add wine to pan juices to make a thin gravy. Serve the rabbit with roast potatoes and red cabbage and cranberry sauce.

My mom used to make fried rabbit (as Joy said, just like chicken) which was excellent. She also made a rabbit pie. It was stewed rabbit pieces (boneless of course) with potatoes, onions, carrots, peas in a gravy and then topped with a biscuit crust. top the biscuit cruse with a bit of butter and bake. Both recipes were awesome.

This is a one pot meal that cooks while you're away!

1 2/12 lb. dressed rabbit, cut up (you can use chicken in this instead)
2 tbsp olive oil
3 mdium potatoes, peeled & halved
4 carrots, cut into 1" pieces
1 onion, sliced thin
1 cup beer
1/4 cup chili sauce
1 tbsp brown sugar
1 clove garlic, minced
1/3 cup cold water
3 tbsp all purpose four
1/2 tsp salt

Season meat with salt & pepper and brown on all sides in hot oil and drain. In a crockpot put potatoes, carrots, and onion and put meat on top. Combine beer, chili sauce, brown sugar and garlic. Pour over meat and cover and cook on HIGH for 4 hours. Remove the meat and drain vegetables, but reserve the liquid. Return meat and vegetables to crockpot and cover. Measure the liquid and add beer or water to make 1 1/2 cups. In a saucepan slowly blend cold water into the flour and stir in reserved liquid and the 1/2 tsp salt. Cook, stirring constantly till thickened. Put meat and vegetables on a platter and serve with gravy. Serves 4
