Brussels Sprouts
(Serves 2)
10-12 good sized Brussels sprouts
3 slices of bacon
1 small onion, diced
Cut dried bottoms from Brussels sprouts and remove a few of the outer leaves.
Slice Brussels sprouts in half lengthwise.
Place cut side down and slice crosswise to create thin strips.
Cut bacon crosswise into small pieces and cook in skillet, over medium heat, until crisp.
Remove bacon and place on paper towel to drain.
Retain bacon grease in skillet and add onion; cook until soft.
If pan is almost dry add 1 Tbsp of oil (canola, olive or vegetable) and heat.
Add shredded Brussels sprouts and season with salt and pepper.
Saute Brussels sprouts until tender (about 10 minutes).
Remove from heat and sprinkle reserved bacon bits on top of Brussels sprouts and serve.
