When I get unexpected guests I hurry and throw 2gether some type of spinwheels while they r gabbing. Recipe consists of flour tortilla, cream cheese, any type of a lunch meat, romaine lettuce, horseradish, and sometimes I will add ranch dressing. I serve these sliced thin w ranch dressing as a dipping sauce...

If you keep biscuit mix or refrigerated bicuits in the can, grated cheese, meat flavored spagetti sauce on hand you can make quick pizza snacks.

Quiche with eggs and cheese and bacon bits.

Found this recipe online and made it last night as had ingredients all on hand. I did however add a can of green beans half drianed before putting on the taters.


Golden Tater Tot Casserole
Serves: 8 Cooking Time: 45 min

Ingredients:

1 pound ground beef
1 can Campbell's Golden Cream Of Mushroom soup
1/2 large bag of Tater Tots
scallions, minced (optional)
paprika, for garnish
Instructions:

Preheat oven to 375F degrees. Press ground beef into bottom of 8 x 10" baking dish. Pour soup over ground beef. Top with scallions, if desired. Place Tater Tots on top of soup. Cook for 45 minutes at 375 *F degrees, until beef is cooked and Tots are crispy golden-brown. Sprinkle paprika on the top before serving.

Notes

If you're aesthetically inclined and have a little time, lay the Tots out in geometrically pleasing patterns, otherwise just pour them on and smooth them with the flat of your hand.

Incase of unexpected company at dinner time, I always make sure to have at least two packages of spaghetti and the ingredients for my homemade spaghetti sauce (which takes less than half an hour to make and can be made with or without meat). Keeping two packages of the spaghetti makes sure I have enough for a larger number of people. For munchies I always have tortilla chips and salsa on hand or cheese and crackers. I also always keep a wide variety of teas in my house and have coffee (both regular and decaf) on hand.

I used to keep my crockpot going all the time, put the leftovers from dinner in there each night. That crockpot lasted for years and I always had soup to serve to unexpected guests. I also had sourdough starter in the refrigerator and it didn't take long to make a loaf of homemade bread. My step-daughter and her boyfriend would stop by for dinner, not giving me any notice. I always served them soup. He pleasantly dubbed my soup "Bone Soup" as I would buy a soup bone with some meat on it and throw it in with the vegetables to make soup.
