This recipe was orginally posted in the April 2011 What's for Dinner thread by Cat lover.

Homemade Chow Mein

1/4 cup olive oil
1/2 tsp sea salt
1 tsp pepper
2 cans bean sprouts

1 can water chestnuts
1 can bamboo shoots
2 tsp splenda
1 cups chicken broth
1/4 cup cold water
1/4 cup lite soy sauce
2 1/2 tbsp cornstarch
2 cups cooked chicken
1 can chow mein noodles

Heat the oil, salt, and pepper. Add bean sprouts, chinese vegetables, water chestnuts, bamboo shoots and splenda. Stir in both and cook 10 minutes. Blend cornstarch, water, and soy sauce. Add to vegetable mixture and stir till thick. Add meat. Serve over rice OR chow mein noodles.
