1 1/2 cups chopped onion
4 cups chopped tomatoes drained save juice
2 cloves garlic
pinch caynne
1 medium sweet green pepper chopped
1/4 teaspoon parsley
2 hot peppers
1/4 cup vinager ( if you use apply cider vinager add 1 T sugar)
1 teaspoon salt
1/4 teaspoon oregano
2 Tablespoons cornstarch
Cook about an hour, add cornstarch to thicken. Pour into sterilized jars and process.
To make a 4x batch:
6 onions
16 cups tomatoes
8 cloves garlic
4 sweet peppers
8 hot peppers
1 tea cayenne pepper
1 tea parsley
1 cup vinager
4 tea salt
1 tea oregano
8 T cornstarch to four cups juice.
4x = 11 pints=this is mild salsa
4x add 12 more hot pepers this is medium
4x add 18 hot peppers this is hot
For my husband we added one anihim (spelling) per pint before processing.
