This isn't a school but the nursing home where my mother is , all they have is beans ,beans and more beans. they had salmon cakes that you could use for a hockey puck they were so hard. Never any fruit, or anything with flavor. Catfish, beans, catfish beans and that is basically all they get.

Why is it that our younger and older generations are forgotten about when it comes to taste and nutrition?

They use the excuse that beans are nutritious and soft for them to eat but come on, how many beans can you eat? So far my mom has had no complaints in this new rehab/nursing home this week. She is allowed to eat just about anything and can request a snack or food at any time. I would talk to the nursing home about your mom's food. See if you can lodge a complaint. Ask to talk to the nurtritionist and then ask her/him why it is that all they eat are beans. Hopefully you can get things changed up a bit for her.

Beans are actually very nutritious if they don't have a lot of salt in them. Beans and rice are whole grains and beans have a lot of protein. Guess you can tell that I like them. lol I am one of those people that could eat beans every day at every meal. When I was in Mexico, they did serve them with ever meal and they were wonderful.

Sorry for the back to back. I meant to say something about the chef salad. This is something I hadn't thought about for my GKs. I will have to check if they like it. I could even make a taco salad, without the taco shell, but with taco meat, cheese, tomato, peas, and for dressing put taco sauce. Humm, this has me thinking.
