| Almost Sweet Potato Pie This pie is made with butternut squash which "slims" it down a lot! 2 pounds butternut squash 1/2 cup fat free egg substitute 1/3 cup light vanilla soy milk 1/3 cup sugar free pancake syrup 1/4 cup Splenda Sweetener 1 tsp ground cinnamon 1/2 tsp vanilla extract '1/4 tsp salt 2/3 cup miniature marshmallows Preheat oven to 350 degrees. Remove both ends of the squash. Peel and cut into large chunks and remove seeds. Till a large microwave safe bowl with 1/2" water. Add the squash and cover. Microwave on HIGH about 8 minutes; just till the squash is tender enough to mash but not overcooked. When cool to handle drain water and mash. Measure 2 cups and out into a 6 cup baking dish that has been sprayed with a nonstick cooking spray. Add next 7 ingredients to the dish. Mix, but do not overmix. Bake about 40 to 50 minutes or till done. Top with the marshmallows and return to the oven. Bake till marshmallows begin to brown. Cool.
