Here's another question....

Does anyone have a chocolate filling like this or an idea of how I can make this filling chocolate?

I asked my dh if he would like these and he said yes but that he would really like them if I made the cake yellow and the filling chocolate. I guess that I could just use a chocolate butter cream filling if I have to.

Thoughts???

Tami, I don't see why you couldn't make the filling chocolate.. I checked out Amanda's recipe for the cream filling & maybe if you added some cocoa powder to it then you'd have a chocolate filling. Here is Amanda's version.

Minny beat me to it, I was going to say the same thing. If you use the recipe at the beginning of this thread, which calls for 4 TBSP of flour, I would say just use 3 T flour and 1 T cocoa, of lighter if you like.

Amanda, I am going to try your version too.. I like the sound of the cream filling. We used to get what we called "smear faces".. a long donut like an eclair & split longways & filled with a real gooey filling that when you took a bite of it, it got all over your face.. hence the name smear face. I want to try this filling in that too.

Tami Let us know how it turns out.

My Mom used to make a fudge type frosting on chocolate cupcakes but I can't remember what all was in it.. I know she used brown sugar & probably milk & cooked it on the stove. Does anyone have or know where I can find a recipe for this type of frosting? We just called it fudge icing so I really don't know what the name of it is & don't know what to search for. Thanks for your help.

I didn't have a chance to make these today because my husband & I were in a car wreck today (we're ok! just a bit sore but we were tied up all day taking care of insurance issues, getting an estimate to get it fixed...etc.)

Once our insurance company set us up with a rental car, I did stop to pick up some marshmallow fluff and my sinus meds. (sinus infection). I'm hoping to make them tomorrow.

I'll let you know how they turn out.

I will keep an eye out for a recipe like you are wanting, Minny. I have some old Southern Living cookbooks here that I can look through.

The only thing that could cap this night off in a very bad way is if we get sleet and ice again with the rain. When it rains, it pours...ya know?!?

Tami. so sorry about the accident, but glad you are ok. Thanks for looking for the recipe for me. Darn, wish Mom had written all her recipes down, but most of them was in her head. There are alot of hers that I can make from watching her, but there are more I don't know .

I was just informed about an hr ago that I am to take refreshments for our mobile home park bingo tomorrow, so that means a trip to the store. I don't have anything here to take. Wish they had let me know a couple days ago so I wouldn't have to rush.
