| Apple Butter in the crockpot 12 to 14 apples (jonathan or winesap are best)
2 cups apple juice
sugar
cinnamon
allspice
cloves
Wash and core apples (do not peel). Combine apples and apple juice in a lightly oiled crockpot. Cover and cook on LOW setting for 10 to 18 hours OR HIGH for 2 to 4 hours.
Once the apples are tender, put them through a food mill to remove all the peel. Measure the cooked apples and return to the crockpot. For each pint of sieved apples add 1 cup sugar, 1 tsp cinnamon, 1/2 tsp allspice and 1/2 tsp cloves and stir well. Cover and cook on HIGH for 6 to 8 hours and stir about every 2 hours. Remove the cover after 3 hours (this allows the apples and juice to cook down). Spoon into sterilized jars and process in a hot bath according to standard canning methods. Makes 5 - 1/2 pint jars
