Thin Mint Cookies (like Girl Scouts) TNT

My husband LOVES those Girl Scout thin mint cookies so when I came across this recipe, I gave it a try and wooohoooo!! he loved them!!! A lot cheaper, too!!!!

1 box Devil Food Cake Mix
2 Eggs
2 T. Water
2 T. Cooking Oil
1/2 C. Cocoa
1 pkg. Chocolate Chips
2-3 drops Wilton's Candy Mint Flavoring

Preparation:
Preheat oven to 400 degrees. Combine cake mix, eggs, water, cooking oil, and cocoa. You will need to blend this together well; this will be a very sticky mess. Let stand for 20 minutes, and then shape into very small 1/2 inch balls. Place these balls on a cookie sheet 2 inches a part, and smash down flat. You will need to spray a large spoon with Pam to make them flat. Bake for about 8 minutes. Let cool until they reach room temperature.
Heat chocolate chips in either the microwave, or in a double boiler. When completely melted add a couple drops of the mint flavoring. Be careful not to add too much, it is a powerful flavoring. You can either spread the melted chocolate on the cookies, or you can dip the cookies into the chocolate.

Copykat recipe for Milano Cookies

1 cup whole almonds, toasted* and cooled
3/4 cup sugar
3 tbsp sugar,divided
3/4 cup all purpose flour
1 tsp baking powder
1/8 tsp salt
1/2 cup butter, softened
1 large egg
1/4 tsp almond extract
4 oz semisweet chocolate, finely chopped

*TO TOAST ALMONDS*- spread on baking sheet and put into a preheated 350 degree oven and stir frequently about 10 minutes or tilll nuts are lightly toasted to pale golden brown. Process almonds in food processor with the 3 tbsp of sugar till almonds are finely ground, then set aside.

Sift the flour, baking powder and salt onto a sheet of wax paper or into a bowl. Set aside. Cream butter with remaining 3/4 cups sugar till mixture is light in color and texture. Beat egg and almond extract then add the almond mixture into the butter mixture till just smooth. On a low speed beat in flour mixture until just smooth. Cover dough tightly in plastic wrap. Refrigerate at least 2 hours (or till well chilled) or up to 5 days. Position racks in oven to center and top third of oven and preheat to 350 degrees. Line 2 large baking sheets with parchment paper or lightly butter them. Portion dough into 80 pieces, about 1 tsp each. Roll into balls. Place balls about 1 1/2 inches apart on baking sheets. Do not crowd. Bake, switching the position of the sheets from top to bottom and front to back after about 5 to 6 minutes. Cook another 5 to 6 minutes or till lightly browned all over. Let cookies cool on the sheets for about 3 minutes, then transfer to cooling racks and cool completely. Melt chocolate (a double boiler is recommended). Spread about 1/2 tsp on the underside of a cookie, then lightly sandwich between another cookie. Refrigerate cookies breifly to set chocolate, but they can be stored in an airtight container at room temperature for some time.
Makes 40 cookies

I have not made these myself, but have had the recipe for awhile so I,m not sure where I copied it from. Let us know how they turn out!
